Wine tourism is much more than visiting a winery or making a tasting. It means linking culture, heritage and landscape with a territory, with wine as the common thread. At DO Binissalem we have been working in this line for years organizing projects such as Wine Days.

Mindfulness & Wine invites you to connect body, mind, environment and wine as the main protagonist with the timelessness of the present. Surrounded by an atmosphere of peace and tranquility, we will focus our attention on getting in touch with ourselves in an intimate and personal way.

A tasting with the 5 senses that will allow you to live the experience with full consciousness. The activity consists of a session of gentle stretching and relaxation to prepare your body and mind for a wine tasting with all your senses using the Mindfulness technique.

This activity, as part of the Wine Days 2021 program, is adapted to the current restrictions and required security measures . It is highly recommended to disconnect from the daily routine, relax in a unique environment, enjoy wine with all you senses and have an unforgettable experience.
The session will be guided by Estefanía Piñero (Essència Pilates), PhD in neurobiology and expert in movement techniques to regain mobility in combination with mental / emotional work for health improvement at all levels.

Departure from Plaça Nova, 23, Celler Jaume de Puntiró. The route passes in front of the church of Santa Maria, along the Camí de Passatemps , where we can touch the grapevines of Can Pau. We pass below the motorway bridge until the end of the Camí de Passatemps. Then we turn left onto the road from Sta. Maria to Sencelles, cross the Estancasangs (ash trees) junction, next to Son Seguí and then turn left to Can Quart, along the paths of Pla de Buc, that leads to the Can Xenoi vineyard on the Camí del Terme between Sta. Maria and Consell. We turn left along Camí del Terme until we reach Camí de Muro, where we turn left again towards Sta. Maria. We then pass through the Can Serví vineyard, cross the motorway bridge, pass the Antiga Quintana and then back to the starting point in the direction of Sa Plaça Nova.

It will consist of 4 short pieces that will be performed 2 per day, over three days, in three different spaces in the DO Binissalem. The short plays have a theme related to the world of wine and will be complemented by a guided tasting (≥18 years old) of one wine.

Synopsis of the works:
“Me cag en mon pare” A glass of wine, a family drama and the tragedy of the Spanish Civil War are the elements that make up this confession by a member of the firing squad. Actor: Lluís Valenciano. Genre: tragedy.

“L’aposta” Richard and Mike are two Englishmen who bet on a case of wine every year that they are able to guess the origin and the vintage of a wine. But this year the bet is a little different. Actors: Lluís Valenciano and Jaume Seguí “Xuia”. Genre: Comedy.

“El petit vinyòvol” Wine has been present in our lives for a long time and from a very young age. In one way or another this drink has been present at different stages in our lives. The Petit Vinyòvol is a small theatrical monologue that talks about wine at two key moments in life. Actor: Lluís Valenciano.

“Mala Cosa” It is the wedding of Clara and Marco and it seems that something has not gone quite well. All guests have to spend the night in the “barracks” … Doesn’t look good … Actors: Nuria Fiol and Jaume Seguí “Xuia”. Genre: Comedy. Dramaturgy: Marga Arrom. Winning piece of the 1st Microvermada text contest.

Myotragus is a theatre company, run by Lluís Valenciano, that performs and creates theatre shows, events, directing and training tasks. Myotragus theatre was founded in September 2015 in Binissalem with the show Amor al bar (Bar Theatre).

You can arrive by train or by car to Santa Maria del Camí, Consell, Binissalem, Sencelles or Santa Eugènia. Once there, you can walk through the village, through the countryside and visit the wineries to discover your favorite wine.

Spring changes the color of Mallorca, now greener and more colorful, for the leaves of the almond trees, the cereal fields and the vegetation and wild flowers that grow everywhere.

On the way to the area of DO Binissalem, you will be accompanied by a spring landscape that begins to change the appearance of the vines, until now peeled, and now with the first green shoots.

You will be accompanied on this trip by the singing of the birds, the ringing of church bells, the sounds of the countryside and the aromas of wine that are going to conquer you.

VINES PRUNING

In winter it is time to prune the vines, with care. The plant is plunged into winter stagnation and the winter environmental conditions allow pruning cuts with a low risk of desiccation or infection.

In winter, the vineyard looks messy, with long, leafless shoots waiting patiently to be pruned.

Pruning is a cultural practice in the vine cycle carried out from the end of November to March. It is very laborious and done by specialized personnel.

The pruning of the vineyard allows defining the productive potential of the plant, and must be adapted to the characteristics of each grape variety, fundamentally, on the fertility of its buds, being able to opt for short pruning or long or mixed pruning.

A very important aspect of pruning is to perform it with not only productive criteria, but also physiological and health, trying on the one hand, to respect the conduction of the sap, without abruptly interrupting the functionality of the vascular tissue and at the same time, making cuts that avoid the drying of the buds.

On the other hand, the most aggressive pruning cuts must be protected with a fungicide product, to avoid the penetration of harmful agents such as fungi that can develop wood diseases that are difficult to treat later.

Finally, pruning must be adjusted to the edaphoclimatic conditions of the area and must guarantee a correct balance between vegetative development and productive capacity to achieve optimal levels of grape and wine quality.

Pruning is therefore an essential action in the management of the vineyard that allows preserving the vitality of the vines, guaranteeing, through its correct performance, a long life to the vineyard. At the same time, it is a fundamental tool to improve the quality of the grapes and the wines produced.

Denomination of Origin Binissalem (DO), for many people, the best wines on the island.

The island of Mallorca offers among all its paradisiacal values, a wonderful gastronomic and wine-growing offer. A great variety of grapes marked by the characteristics of the soil and the climate, led in character, history and quality by the DO Binissalem wines.

The cultivation of vineyards and winemaking in Mallorca was introduced by the Romans in the s. I B.C. Since the introduction of the cultivation of the vineyard, in 121 B.C., the vine has always been cultivated and wine has been made in the region of DO Binissalem. In the 1st century BC., Plinio talks about Balearic wines, comparing them with the best of Italy. Even during the period of Muslim domination, despite the Koranic prohibitions, the vine was cultivated and wine was made, as confirmed by the Liber maiolichinus, in which
it is related the invasion of Muslim Mallorca by the Pisan troops “who satiated thirst with the wine of the Saracens”. The Arab Beni Abet, offered Jaime I, when he conquered Mallorca, in 1230, “grapes of excellent quality”.
The cultivation of the vine in the region has gone through moments of splendor and others of decline related to the pre-phylloxera and post-phylloxera stages, the Spanish Civil War and the tourist “boom” of the sixties, with a new resurgence at the end of the decade of the eighties. Since then, there has been continued growth in the sector.

Currently, the wine sector represents one of the most successful economic activities, being a sector with an important weight within the agri-food sector. In recent years, the vineyard area and the number of wineries have increased significantly on the Island. Many young people, once trained in agronomy, viticulture and oenology, have started wine-making projects, although there are also many foreign investors, often non-professionals, who have seen in the production of wine an added value to their social status.
The grape varieties grown in Mallorca authorized for vinification are the local ones: Manto Negro, Callet, Fogoneu, Gorgollassa, Escursac, Monastrell, Moll, Prensal Blanc Giró Ros, Malvasía Aromática, Malvasía de Banyalbufar, Moscatel de Alejandría, Moscatel de Grano Menudo and the foreign Cabernet Sauvignon, Chardonnay, Garnacha Blanca, Garnacha Tinta, Macabeo, Viura, Merlot, Parellada, Pinot Noir, Riesling, Sauvignon Blanc, Syrah, Tempranillo, Viognier.
Several levels of wine protection coexist in Mallorca such as Protected Geographical Indications (PGI) and Protected Designations of Origin (PDO): IGP Illes Balears, IGP Vi de la Terra Mallorca, IGP Serra de Tramuntana-Costa Nord, DO Pla i Llevant and DO Binissalem .

In 1990 the Binissalem DO was recognized, the first DO in Mallorca and the second in the Balearic Islands, after the Queso Mahón-Menorca PDO. The DO Binissalem was created by the need to protect the wines made in the region, from those that came from the main land.

Since then, the DO Binissalem has opted for local grape varieties: Manto negro, Callet, Gargollassa, Moll, Giró ros…, which have made it possible to produce unique wines, achieving high quality standards.
With a privileged location, near the Serra de Tramuntana and protected by it, the 600 hectares of vineyards registered in the DO Binissalem grow. They belong to the municipalities of Santa Maria del Camí, Consell, Binissalem, Santa Eugenia and Sencelles, beautiful villages from the interior of Mallorca with its own architecture, place names and winemaking tradition.

The climatic and soil conditions, together with the local grape varieties, give rise to a grape of excellent quality, which makes it possible to produce fruity wines, with a Mediterranean character, with the expression of varietal nuances and aromas of native grapes and of the terroir, which make them singular and unique.

The grape varieties authorized in the DO Binissalem are the red varieties: Manto Negro, Callet, Gargollassa, Monastrell, Tempranillo, Cabernet Sauvignon, Merlot, Syrah; and the white varieties: Moll or Prensal Blanc, Moscatel, Giró Ros, Parellada, Macabeo and Chardonnay.

Red wines always include the Manto Negro variety, with a minimum of 30%, and white wines, the Moll or Moscatel variety with a minimum of 50%.

The DO Binissalem has wineries with more than 80 years of history. A total of 11 wineries that protect wines in the DO Binissalem with the labels among which are: (Anaros from Son Roig, Blanc de Blancs, Veritas Roig, Vinyes Velles or Pedra de Binissalem from Bodegas José L. Ferrer; Carmesí, Buc or AmicAmat from Jaume de Puntiró; Albaflor or Raff110 from Vins Nadal; Montnegre or Gran Padrina from Vinyes i Vins Ca Sa Padrina; Llacó or Serral from Can Ramis; Lluor or Torrent Fals from Vinya Taujana; 88 or Goig from Ramanyà; Encobeït, Llampant or Brodat from Sebastià Pastor; Supernova or Can Verdura from Can Verdura Viticultors and Memòries de Biniagual, Verán or Gran Verán from Bodega Biniagual).

Tranquil white, rosé and red wines, dry or sweet, and sparkling white and rosé wines, highly appreciated on the island and available in the best food stores and in the best restaurants.
Those in charge of these wineries, owners, oenologists, vine growers such as: Sebastià Pastor, Toni Ramis, Esperanza Nadal, Charlotte Miller, Juan and Sebastià Crespí, Tomeu Llabrés, José Luis Roses and Pepe Roses, Germán Albertí, Pere Calafat, Guillem and Andreu Suñer, Pere Llabrés, produce quality wines in modern facilities and technology, without forgetting the legacy of their ancestors.

In a place like Mallorca and in a wine region like DO Binissalem, to speak of wine tourism is to speak of heritage, culture, traditions, wine, gastronomy and landscape.

The Wine Route will guide you through paths, wineries, vineyards, towns and villages, a unique landscape, different in each season of the year, which will allow you to discover an unknown Mallorca. A touristic proposal to enjoy at any time of the year.

You can enjoy visits to vineyards and wineries with wine tasting, as well as other activities offered by the wineries. For this, a prior reservation is necessary. During the visit you will have the opportunity to taste and purchase a wide variety of wines.

The winemaking importance of the towns that make up the Binissalem Denomination of Origin is tangible, old and deeply rooted. Wine has sculpted our landscape, our architecture and our culture. You will find the mark left by the Romans, the Arabs and the Catalans in the place names, in the roads and in the architecture. Monuments and churches, museums and houses of culture, talayotic remains, stone houses, old wineries…

Our rich and varied gastronomy is based on the Mediterranean diet, on the local and seasonal products present in the traditional cuisine and, also, on the modern avant-garde cuisine, which you will find in the region and its surroundings.

One of the pleasures that nature gives us is walking along the paths enjoying the landscape offered by the vineyards of the Binissalem Denomination of Origin region, where the wine culture was introduced through the Roman civilization and left its mark on each one of the towns of the island, as well as on many roads traced at that time.

We invite you to enter a labyrinth of paths traced on the map, which will lead you through a surprising landscape of almond, carob, olive, fig and vine trees, with panoramic views of the Serra de Tramuntana.

WINTER
The dormant vine needs the care of man, who pampers it and prepares it to bear fruit; it’s time to prune.
SPRING
The explosion of the senses, emotions and aromas arrives when the vines begin to give life to the landscape and flowering begins; those little glimpses of vineyard life. Later, green pruning will take place to remove the most superfluous leaves.
SUMMER
The sunsets turn the fields into green seas. The end of the summer will come with the harvesting of the grapes and the smell of harvested grapes in the villages.
AUTUMM
The vines are dressed in a thousand colors, green, yellow, red, gray. It is the time of well-deserved rest after having given the precious fruit.

WINE TOURISM, INLAND TOURISM IN MALLORCA
Mallorca is an Island known for its beautiful coastal or high mountain landscapes, but not so much for its rural inland landscape, for its vineyards or for its wines. The Binissalem Denomination of Origin, with 30 years of history, was the first Denomination of Origin in Mallorca. It has a long winemaking tradition that dates back to the first century. It enjoys an excellent location, where the soil and climate, together with the native grape varieties, result in wines of differentiated quality, with a Mediterranean character, which accompany the rich and varied local cuisine.
Getting away from the hustle and bustle and strolling through the streets of the towns, getting to know their people and their history, participating in the festivals, enjoying the local cuisine or strolling through a market are some of the attractions of the DO Binissalem region.
In the five municipalities that make up the Denomination of Origin Binissalem, Santa Maria del Camí, Consell, Binissalem, Santa Eugènia and Sencelles, you will discover the trace of our ancestors who never stopped cultivating the vineyard and making wine throughout history.

TASTE THE LANDSCAPE THROUGH ITS WINES
The Sierra de Tramuntana, the highest mountain range on the island, is the backdrop to the DO Binissalem, which it protects from cold north winds and frost. Quaternary calcareous sediments make up stony soils, where the vine grows in harmony with other woody plants, almond trees, carob trees, olive trees and wild olive trees … The autochthonous varieties, Manto negro, Callet, Moll, Giró ros, Gargollassa … express in their fruits the essence of the natural environment where they are grown, giving rise to expressive wines, with a lot of character and high quality.


The work in the vineyard is multiple and complex, it requires knowledge of the soil, the climate and the grape varieties to obtain the maximum quality of the fruit. Winter pruning, tillage of the land, spring green treatments and pruning, control of production and ripening when the harvest approaches…
The grapes grown with care and care by the vine growers, in small areas that make up the landscape of the region. Wines are produced in the wineries distributed in the 5 municipalities of the DO Binissalem.


LIVE AN EXPERIENCE IN THE DO BINISSALEM VINEYARDS OR WINERIES
Wineries with history and charm and magical vineyards, which you can enjoy as a couple, as a family or with friends in a unique experience, which transforms the visitor into the protagonist of the proposed activities.
You can visit the wineries and vineyards enjoying some of the activities they offer, guided tours, tastings, pairings, workshops, concerts … where you will discover the history of Mallorca wine.
The oenologists and, many times, owners of the small wineries, will explain, their history, how they cultivate the vines and make the wines. Whites, rosés, young reds, aged reds, sparkling wines and some sweet wines. Discover the nuances of the local varieties and the “terroir” in each bottle of wine.


Pruning a vineyard, having lunch or dinner among vines makes the wines transmit the aromas and flavors of the landscape and the land; Taste the native varieties, Mantonegro, Callet, Moll, Giró ros, Gargollassa … unique and singular;

Visit the wineries and move between tanks and barrels, perceiving the aromas of the wine making and the wood where they are refined until the desired quality is achieved; Directed tastings or courses to get started in the world of wine to understand what each wine tells us, each drop; Enjoy culture, always hand in hand with wine, theater, music, art…; Letting yourself be guided by the peoples who tell us about other cultures, Romans, Arabs … through their architecture, their names, their legends and their people; Live the popular festivals always accompanied by our own gastronomy where we toast with wine, the wine that joins us.

Visiting a vineyard at sunset is a unique experience; it is discovering the calm and the light of inland Mallorca, the different aromas of the countryside in each season of the year.

MALLORCAN WINE AND GASTRONOMY
According to the Mediterranean diet, wine is considered one more food. A food that consumed in moderation is healthy, due to its chemical composition rich in antioxidants. Wine is part of our culture, traditions and festivals. Wine is present in architecture, literature, painting, sculpture and is present in the landscape and gastronomy of Mallorca.
The local gastronomy, rich and varied, is, without a doubt, the best accompaniment to DO Binissalem wines. “Frito mallorquín, “Sopas mallorquinas”, “fideus de vermar”, “arròs amb salseta”, “variat”, “porcella rostida”, “aguiat de pop”, “llom amb col” “arròs de peix” “tumbet”, trampó, “coca de prebes torrats” and an incredible seafood gastronomy are some of the most traditional dishes that you cannot miss, without forgetting sweet dishes such as “ensaimada”, “gató”, “cremadillo”, almond ice cream, greixonera de brossat , coca amb albercoc, cardinal, “cuarto embetumat” … ideal to finish a meal.
In addition, you will also discover seasonal cuisine and local products, avant-garde cuisine, of most of the renowned local chefs and, you will find the right wine for each savoury or sweet dish!

Surely, this year Sant Joan celebration will be different, but do not forget to celebrate it, with little but good company, and toast with our wines. Wines made with local varieties of vines that have been pampered and cared for by several generations of winegrowers, who have worked to maintain this interior landscape, which transmits a history of wine culture and natural heritage.

The Denomination of Origin (DO) Mahón-Menorca, DO Binissalem, DO Oli de Mallorca, DO Oliva de Mallorca, DO Pla i Llevant and Protected Geographical Indications: IGP Sobrasada de Mallorca and IGP Vino de la Tierra Mallorca, represent the main quality brands  of gastronomic products  and wines from the Balearic Islands.

Representing most of the agricultural, livestock and industrial sector of the Balearic Islands. these quality brands took the path of certifying their geographical differentiation and European recognition, with the aim of guaranteeing quality to consumers. A quality seal means tradition, uniqueness and sustainability factors which are in harmony with all the processes and guarantee the highest quality.  This, added to the values of local product, the conservation and recovery of the rural landscape of our Islands and in the framework of a sustainable economic activity which employs thousands of producers and processors. Behind each seal, there is a lot of work, effort, quality, tradition, history and cultural and gastronomic value.

Quality products are the heritage of the society where they are produced, so they must be known and appreciated by consumers. They are all part of the gastronomy of the Balearic Islands, totally integrated into traditional and avant-garde gastronomy and pair perfectly.

A SPRING WITHOUT WINE DAYS-DO BINISSALEM

On these dates, we would be living the reference event in wine tourism in Mallorca, from May 7 to 17, the 7th Edition of Wine Days-DO Binissalem was scheduled, but this year it has not been possible, like so many parties, fairs and scheduled events.
However, we don’t want to miss the opportunity that you can enjoy a walk through a different Wine Days, a virtual tour that will take you to visit the region of DO Binissalem, Santa Maria del Camí, Consell, Binissalem, Santa Eugènia and Sencelles, visit its vineyards and its wineries, tastings, workshops, guided tours … A preview so that we can celebrate again very soon!
