Denomination of Origin Binissalem (DO), for many people, the best wines on the island.

The island of Mallorca offers among all its paradisiacal values, a wonderful gastronomic and wine-growing offer. A great variety of grapes marked by the characteristics of the soil and the climate, led in character, history and quality by the DO Binissalem wines.

The cultivation of vineyards and winemaking in Mallorca was introduced by the Romans in the s. I B.C. Since the introduction of the cultivation of the vineyard, in 121 B.C., the vine has always been cultivated and wine has been made in the region of DO Binissalem. In the 1st century BC., Plinio talks about Balearic wines, comparing them with the best of Italy. Even during the period of Muslim domination, despite the Koranic prohibitions, the vine was cultivated and wine was made, as confirmed by the Liber maiolichinus, in which
it is related the invasion of Muslim Mallorca by the Pisan troops “who satiated thirst with the wine of the Saracens”. The Arab Beni Abet, offered Jaime I, when he conquered Mallorca, in 1230, “grapes of excellent quality”.
The cultivation of the vine in the region has gone through moments of splendor and others of decline related to the pre-phylloxera and post-phylloxera stages, the Spanish Civil War and the tourist “boom” of the sixties, with a new resurgence at the end of the decade of the eighties. Since then, there has been continued growth in the sector.

Currently, the wine sector represents one of the most successful economic activities, being a sector with an important weight within the agri-food sector. In recent years, the vineyard area and the number of wineries have increased significantly on the Island. Many young people, once trained in agronomy, viticulture and oenology, have started wine-making projects, although there are also many foreign investors, often non-professionals, who have seen in the production of wine an added value to their social status.
The grape varieties grown in Mallorca authorized for vinification are the local ones: Manto Negro, Callet, Fogoneu, Gorgollassa, Escursac, Monastrell, Moll, Prensal Blanc Giró Ros, Malvasía Aromática, Malvasía de Banyalbufar, Moscatel de Alejandría, Moscatel de Grano Menudo and the foreign Cabernet Sauvignon, Chardonnay, Garnacha Blanca, Garnacha Tinta, Macabeo, Viura, Merlot, Parellada, Pinot Noir, Riesling, Sauvignon Blanc, Syrah, Tempranillo, Viognier.
Several levels of wine protection coexist in Mallorca such as Protected Geographical Indications (PGI) and Protected Designations of Origin (PDO): IGP Illes Balears, IGP Vi de la Terra Mallorca, IGP Serra de Tramuntana-Costa Nord, DO Pla i Llevant and DO Binissalem .

In 1990 the Binissalem DO was recognized, the first DO in Mallorca and the second in the Balearic Islands, after the Queso Mahón-Menorca PDO. The DO Binissalem was created by the need to protect the wines made in the region, from those that came from the main land.

Since then, the DO Binissalem has opted for local grape varieties: Manto negro, Callet, Gargollassa, Moll, Giró ros…, which have made it possible to produce unique wines, achieving high quality standards.
With a privileged location, near the Serra de Tramuntana and protected by it, the 600 hectares of vineyards registered in the DO Binissalem grow. They belong to the municipalities of Santa Maria del Camí, Consell, Binissalem, Santa Eugenia and Sencelles, beautiful villages from the interior of Mallorca with its own architecture, place names and winemaking tradition.

The climatic and soil conditions, together with the local grape varieties, give rise to a grape of excellent quality, which makes it possible to produce fruity wines, with a Mediterranean character, with the expression of varietal nuances and aromas of native grapes and of the terroir, which make them singular and unique.

The grape varieties authorized in the DO Binissalem are the red varieties: Manto Negro, Callet, Gargollassa, Monastrell, Tempranillo, Cabernet Sauvignon, Merlot, Syrah; and the white varieties: Moll or Prensal Blanc, Moscatel, Giró Ros, Parellada, Macabeo and Chardonnay.

Red wines always include the Manto Negro variety, with a minimum of 30%, and white wines, the Moll or Moscatel variety with a minimum of 50%.

The DO Binissalem has wineries with more than 80 years of history. A total of 11 wineries that protect wines in the DO Binissalem with the labels among which are: (Anaros from Son Roig, Blanc de Blancs, Veritas Roig, Vinyes Velles or Pedra de Binissalem from Bodegas José L. Ferrer; Carmesí, Buc or AmicAmat from Jaume de Puntiró; Albaflor or Raff110 from Vins Nadal; Montnegre or Gran Padrina from Vinyes i Vins Ca Sa Padrina; Llacó or Serral from Can Ramis; Lluor or Torrent Fals from Vinya Taujana; 88 or Goig from Ramanyà; Encobeït, Llampant or Brodat from Sebastià Pastor; Supernova or Can Verdura from Can Verdura Viticultors and Memòries de Biniagual, Verán or Gran Verán from Bodega Biniagual).

Tranquil white, rosé and red wines, dry or sweet, and sparkling white and rosé wines, highly appreciated on the island and available in the best food stores and in the best restaurants.
Those in charge of these wineries, owners, oenologists, vine growers such as: Sebastià Pastor, Toni Ramis, Esperanza Nadal, Charlotte Miller, Juan and Sebastià Crespí, Tomeu Llabrés, José Luis Roses and Pepe Roses, Germán Albertí, Pere Calafat, Guillem and Andreu Suñer, Pere Llabrés, produce quality wines in modern facilities and technology, without forgetting the legacy of their ancestors.

WINTER
The dormant vine needs the care of man, who pampers it and prepares it to bear fruit; it’s time to prune.
SPRING
The explosion of the senses, emotions and aromas arrives when the vines begin to give life to the landscape and flowering begins; those little glimpses of vineyard life. Later, green pruning will take place to remove the most superfluous leaves.
SUMMER
The sunsets turn the fields into green seas. The end of the summer will come with the harvesting of the grapes and the smell of harvested grapes in the villages.

Mallorca is an Island known for its beautiful coastal or high mountain landscapes, but not so much for its rural inland landscape, for its vineyards or for its wines. The Binissalem Denomination of Origin, with 30 years of history, was the first Denomination of Origin in Mallorca. It has a long winemaking tradition that dates back to the first century. It enjoys an excellent location, where the soil and climate, together with the native grape varieties, result in wines of differentiated quality, with a Mediterranean character, which accompany the rich and varied local cuisine.
Getting away from the hustle and bustle and strolling through the streets of the towns, getting to know their people and their history, participating in the festivals, enjoying the local cuisine or strolling through a market are some of the attractions of the DO Binissalem region.
In the five municipalities that make up the Denomination of Origin Binissalem, Santa Maria del Camí, Consell, Binissalem, Santa Eugènia and Sencelles, you will discover the trace of our ancestors who never stopped cultivating the vineyard and making wine throughout history.

TASTE THE LANDSCAPE THROUGH ITS WINES
The Sierra de Tramuntana, the highest mountain range on the island, is the backdrop to the DO Binissalem, which it protects from cold north winds and frost. Quaternary calcareous sediments make up stony soils, where the vine grows in harmony with other woody plants, almond trees, carob trees, olive trees and wild olive trees … The autochthonous varieties, Manto negro, Callet, Moll, Giró ros, Gargollassa … express in their fruits the essence of the natural environment where they are grown, giving rise to expressive wines, with a lot of character and high quality.


The work in the vineyard is multiple and complex, it requires knowledge of the soil, the climate and the grape varieties to obtain the maximum quality of the fruit. Winter pruning, tillage of the land, spring green treatments and pruning, control of production and ripening when the harvest approaches…

In recent years, wine tourism is another activity of wineries. The ‘Wine Route’ offers you a tourist attraction to visit the territory, the vineyards and the wineries, tasting the wines of the DO accompanied by the local cuisine. Getting lost in a market, visiting a cultural centre, walking along a path between vineyards or through the streets of towns and villages, with details of a unique architecture in each of them.

The DO is made up of 5 municipalities in the centre of Mallorca, Santa Maria del Camí, Consell, Binissalem, Santa Eugènia and Sencelles, which make up a wine territory with a tradition and excellence recognised in the world, a tradition that moves to celebrations. The wine-related festivals, Festa des Vermar de Binissalem, the Festa del Vi Novell de Santa Maria, Wine Days… are some of the events that take place in the region and that increasingly have more local and foreign visitors.

The people who are part of this Designation of Origin work in different fields, the wine growers and winemakers, to preserve the landscape of vineyards and the legacy received from the ancestors, producing a quality grape and making unique wines with a marked character, printed by them characteristics of the soil, climate and local grape varieties.

The technicians work to promote the DO and verify compliance with the product specifications. We explain the certification, the verification by the Regulatory Council that the wines comply with the Specification, which translates into the label numbered with the DO Binissalem mark, which you will find in all the bottles of wines covered by the DO Binissalem.

HARVEST STARTS AT THE DO BINISSALEM. Quality and uniqueness

Tuesday, August 13, the harvest officially begins at the Binissalem DO. Can Verdura Viticultors has been the first winery of the DO Binissalem, which has started the harvest with the Chardonnay variety.

In the next few days and weeks the rest of the wineries and vineyards of the villages of Santa María del Camí, Consell, Binissalem, Santa Eugènia and Sencelles will begin their activity. The harvest will last until October and until the end of November, the wine elaboration.

The earliest varieties such as Chardonnay or Moscatel are the first to be harvested and, progressively, will be followed by Shiraz, Merlot and then Mantonegro, Callet, Cabernet Sauvignon, or the white varieties Moll or Giró ros, among others.

When walking through the region of the DO Binissalem, you can see “seas of green vineyards”, with their clusters hanging, some already poisoned and in the process of maturation. From this moment until October, you will be able to see grape pickers and harvesters, trailers that come and go from the vineyards to the wineries and the installations underway. The tanks will begin to fill and a sweet aroma will perfume everything.

The winemakers pending, day by day, of the weather conditions, the ripening of the fruit and having everything ready to start making the wines, will decide the ideal time of the harvest, according to the maturation of each variety, and to each wine you want to make.

The vines will bear the appreciated fruit, the grape to elaborate unique wines, with the character of the Binissalem Designation of Origin.

In this campaign a moderate production is expected, perhaps a little lower than that of the previous campaign which was 1,615,000 kg.

At this time, the grape has an excellent sanitary state and quality, which suggests that we will have a good harvest.

The dedication of winemakers and winemakers makes it possible for us to enjoy quality wines with Denomination of Origin, based on our native varieties, in addition to maintaining a landscape and an agricultural activity with an important weight within our economy. The wine activity also favors inland tourism, “winetourism”, quality tourism, interested in the landscape, our culture and local products such as wine.
